I linked my recipe for Apple Carrot Bread/Muffins. I always make them like muffins, but it can be switched to a loaf, hence the double name. I hope you like them. Cool giveaway!

I don't have a blog, but here's a muffin recipe I really like that's packed with good for kids ingredients.

Sweet Potato Apple Muffins

1 cup rolled oats
1 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground nutmeg
2 small apples, peeled and diced
1 cup leftover mashed sweet potato
3/4 cup brown sugar
1/3 cup vegetable oil
1/4 cup milk
1 large egg
1 tsp vanilla

-Preheat oven to 400 Degrees
-In a medium bowl, whisk oatmeal, flour, baking powder and soda, cinnamon, and nutmeg.
-In another small bowl, combine sweet potato, brown sugar, oil, egg, milk and vanilla, whisking to blend well. Pour over dry ingredients and stir to combine.
-Add apple dices, stir to combine.
-Scoop into muffin tins and bake for 15-20 minutes.

Pumpkin Chocolate Chip Muffins

Ingredients

3/4 cup white sugar
1/4 cup vegetable oil
2 eggs
3/4 cup canned pumpkin
1/4 cup water
1 1/2 cups all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/2 cup semisweet chocolate chips


Directions

1.Preheat the oven to 400 degrees F (200 degrees C). Grease and flour muffin pan or use paper liners.

2.Mix sugar, oil, eggs. Add pumpkin and water. In separate bowl mix together the baking flour, baking soda, baking powder, spices and salt.. Add wet mixture and stir in chocolate chips.

3.Fill muffin cups 2/3 full with batter. Bake in preheated oven for 20 to 25 minutes.

Rhubarb Muffins

Ingredients

1/2 cup vanilla yogurt
2 tablespoons butter, melted
2 tablespoons vegetable oil
1 egg
1 1/3 cups all-purpose flour
3/4 cup brown sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup diced rhubarb

1/4 cup brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup crushed sliced almonds
2 teaspoons melted butter

Directions

1.Preheat the oven to 350 degrees F (175 degrees C). Grease a 12 cup muffin tin, or line with paper liners.

2.In a medium bowl, stir together the yogurt, 2 tablespoons of melted butter, oil and egg. In a large bowl, stir together the flour, 3/4 cup of brown sugar, baking soda and salt. Pour the wet ingredients into the dry, and mix until just blended. Fold in rhubarb. Spoon into the prepared muffin tin, filling cups at least 2/3 full.

3.In a small bowl, stir together 1/4 cup of brown sugar, cinnamon, nutmeg, almonds, and 2 teaspoons of melted butter. Spoon over the tops of the muffins, and press down lightly.

4.Bake for 25 minutes in the preheated oven, or until the tops spring back when lightly pressed. Cool in the pan for about 15 minutes before removing.

Cappaccino Muffins

Ingredients

2 cups all-purpose flour
1/2 cup sugar
1/2 cup packed brown sugar
2 teaspoons baking powder
2 teaspoons instant coffee granules
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 egg
1 cup milk
1/2 cup butter, melted
1 teaspoon vanilla extract
1 cup miniature semisweet chocolate chips

TOPPING:
6 tablespoons all-purpose flour
1/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/4 cup cold butter

Directions

1.In a large mixing bowl, combine the flour, sugars, baking powder, coffee granules, cinnamon and salt. Whisk the egg, milk, butter and vanilla; stir into dry ingredients just until moistened. Fold in chocolate chips. Fill greased or paper-lined muffin cups three-fourths full.

2.For topping, combine the flour, brown sugar and cinnamon in a small bowl. Cut in butter until mixture resembles coarse crumbs. Sprinkle over batter. Bake at 375 degrees F for 22-24 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.

These are YUMMY!
Self Filled Cupcakes:
1 pkg.Chocolate Cake Mix(Any Variety)
1/8 oz. pkg. cream cheese(softened)
1/3 cup sugar
1 egg--Dash Salt
1- 6 oz.pkg. semi-sweet chocolate chips
Mix cake according to pkg.directions.Put paper cups in muffin pans and fill 2/3 full.Next beat the cream cheese and add in the sugar.Next beat in the egg and salt.Stir in the chocolate chips.Drop by rounded tsp. into each cupcake.Bake as directed on package.Makes 24-30 Cupcakes.Frost if you like! geauxtami@yahoo.com

Rapberry white chocolate muffins:



INGREDIENTS:
1 egg
2 cups Original Bisquick® mix
2/3 cup milk
1/2 cup white baking chips
1/3 cup sugar
2 tablespoons vegetable oil
1 cup raspberries


1: Heat oven to 400°F. Grease bottoms only of 12 regular-size muffin cups, or place paper baking cup in each muffin cup.

2: Beat egg slightly in medium bowl. Stir in remaining ingredients except raspberries just until moistened. Gently stir in raspberries. Divide batter evenly among cups.

Strawberry Muffins

2 1/2 cups all-purpose flour
2/3 cup sugar
1 tsp baking soda
3/4 tsp salt
1 1/2 cup fresh strawberries, sliced
1 cup whole milk
1/3 cup butter melted
1 1/4 tsp vanilla extract
1 egg, lightly beaten
1 egg white, lightly beaten
1 1/2 tbsp sugar

Combine flour and next 4 ingredients in a large bowl, and stir well. Add
fresh strawberries; stir well. Combine
milk and next 4 ingredients; stir well. Add to dry ingredients, stirring
just until moistened.

Divide batter evenly among 18 muffin cups;
sprinkle 1-1/2 tbsp sugar evenly over muffins. Bake at 350 for 25 minutes
or until toothpick inserted in center comes out clean. Remove from pans
immediately; let cool on a wire rack.

18 servings.

This is cheat but that is the idea :)
Make any flavor cake mix as directed then add one or more of the folowing: choc chips, reeses pieces, m&m's, pudding no milk added, broken up candy bar, etc Bake in muffin liners. minus 25 mins 350 degrees
