5....4....3...2...1...BLAST OFF!
The weather's starting to heat up again so the Kid and I figured it was high time we got the rocket popsicle molds out and started making frozen treats again. Here's a healthy twist on that old ice cream truck standy-by, the rocket pop!
Berry Blast-off Pops
Makes 6
1 cup fresh organic strawberries, washed and hulled
1/4 cup fresh organic raspberries, washed
1 tbsp organic agave nectar (our favorite brand is Xagave)
Juice of 1 lime
1/2 cup organic low-fat vanilla yogurt
1 cup fresh organic blueberries, washed
1 banana, peeled and cut into chunks
For this recipe, you'll need a blender and six popsicle molds - they can be anything, even paper cups outfitted with wooden popsicle sticks. We used our favorite rocket pop mold.
In a blender, combine strawberries, raspberries, agave, and lime juice and blend until smooth and well-combined. Pour in popsicle molds, filling them about 1/3 full. Top with a heaping tablespoon of yogurt. Rinse out your blender and add the blueberries and banana. Blend until smooth and well-combined. Pour mixture into each mold, leaving space at the top to insert your stick so the mold doesn't overflow.
Place in freezer for 5 hours or more or until frozen. Unmold and enjoy on a warm day.
